Pomegranate, Sesame & Coriander Chicken

August 2, 2016
pomegranate chicken recipe

My mum’s friends Soudhi and Massoud came over to England from Iran during the revolution. They had to start fresh with their two kids but now they’ve got a lovely life in Blighty and man, can Soudhi cook.

My favourite is always the crispy bottom rice – you probably know what a rice fanatic I am – so that variation is one of my favourites. I’m pretty sure it was Soudhi whose cooking got me into pomegranate. That sweet tang is so divine. That jewel ruby red.
So, this is a little chicken dish I came up with, inspired by Iranian cuisine, but with a bit of a twist. It is ridiculously easy and I ate it with some baba ghanoush that my friend Azza brought over on Friday. It’s a really light meal – great for lunch. You can have it with some crackers or some extra salad.
