Rice is something I can’t live without. Potatoes too… but mainly rice. It’s so freaking fluffy. One of my pet peeves is getting a curry at a restaurant and they don’t give you enough rice.

Anyway – I made these waffles not only to extend my on going love affair with all things rice related, but also because my sister (did I mention?? haha) is gluten free. She’s pretty impressive… I tried to be gluten free and I’m pretty sure that during that time I ate more gluten than anyone has ever eaten in their life. I’m such a typical “I want what I can’t have” person.
So, I basically adapted this classic waffle recipe and slightly changed the amounts of rice flour to egg. It’s sooo good! If you can’t find rice flour in your local supermarket, try a shop where they sell Indian/Sri Lankan / Vietnamese food. They’ll probably have it.
