Gluten Free Rice Flour Waffles

Rice is something I can’t live without. Potatoes too… but mainly rice. It’s so freaking fluffy. One of my pet peeves is getting a curry at a restaurant and they don’t give you enough rice.

“God dammit” I think “this sauce to rice ratio is ALL OFF”
Anyway – I made these waffles not only to extend my on going love affair with all things rice related, but also because my sister (did I mention?? haha) is gluten free. She’s pretty impressive… I tried to be gluten free and I’m pretty sure that during that time I ate more gluten than anyone has ever eaten in their life. I’m such a typical “I want what I can’t have” person.
So, I basically adapted this classic waffle recipe and slightly changed the amounts of rice flour to egg. It’s sooo good! If you can’t find rice flour in your local supermarket, try a shop where they sell Indian/Sri Lankan / Vietnamese food. They’ll probably have it.

Gluten Free Rice Flour Waffles

  1. 1 1/3 cups rice flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon salt
  4. 2 teaspoons sugar
  5. 2 eggs, separated
  6. 1/2 cup butter, melted
  7. 1 cup milk

  1. In a large mixing bowl, whisk together all dry ingredients.
  2. Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
  3. Beat whites until moderately stiff; set aside.
  4. Add milk and melted butter to dry ingredient mixture and blend.
  5. Fold stiff egg whites into mixture.
  6. Ladle mixture into hot waffle iron and bake.
For the topping I went all smoothie bowl on that waffle – half a frozen banana, a handful of frozen berries, almond milk and added it to a blender. Then plopped some red currants on top.
In the words of me: NOM.

    Hi trisha
I’m excited to try your recipe. I have been trying hard to find a gluten free waffles made with white rice flour and cornstarch.
Although my question is, in your recipe did your waffles turned out crispy on the outside ?
