Happy Friday 13th lovelies! I hope you had a good week… I am finally recovering from my cold. I am such a weakling! And I still sound slightly like an old man who smokes a pipe… but hey, don’t people say croaky voices are sexy or something?

So, after a long time of not posting any baked goodness, I thought the combination of peanut butter cookies and custard cream was too good to pass up. Last night I went for waffles at a place called Cassonade on Oranianstrasse in Berlin and had an amazing Lutticher waffle with apple sauce and nutella. Some people think that’s a disgusting combo, but those who think that haven’t tried it! While I am trying to cut down on my insanely high sugar intake.. yesterday was a treat day and I thought… why end there. so I baked these at about 11 pm last night and then watched some breaking bad. Thrilling!

peanut cookies with custard creamThese sandwich biscuits are actually pretty easy but after making the dough you do need to cool it in the fridge for about an hour to get it nice and stiff.

Recipe:

Ingredients:

Biscuits:

230g butter, room temperature
230g creamy peanut butter
200 g granulated sugar
200 gĀ  light brown sugar, packed
2 eggs
2 tsp vanilla
320 g plain flour
1 tsp baking soda
1 tsp baking powder
approx 70 g extra sugar for rolling

Custard Filling:

230 g butter, room temperature
130 g custard powder
520g powdered sugar
1 tsp milk

Method:

Biscuits

1. Preheat the oven to 180Ā°C and line a baking tray with grease proof paper
2. Mix all the biscuit ingredients (except the extra sugar) together with a mixer – leave the baking soda and baking powder for the end
3. Cover and place in the fridge for an hour
4. Remove from the fridge and role into balls – then roll these in the sugar to coat them
5. Use a fork to press the balls slightly and give a cute fork pattern on top
6. Bake for about 8 minutes or until slightly crunchy on the outside – then leave to cool

Custard filling:

1. Mix all the ingredients together until thoroughly mixed
2.Ā  Spread on a biscuit and sandwich with another biscuit
3. EAT!

    What a combo – custard and pb! Would not have thought of combining those two together but I can imagine must be magical in the mouth! We are almost liek food twins – I made a batch of cookies last night too whilst watching tv! šŸ˜›

      Ooo what were your cookies? I made more last night.. because I wasn’t really happy with the photos of the peanut and custard ones.I am finding this autumn light really unsatisfying.. might have to try more studio like lighting. Did you have a good weekend? x

    ooh, peanut butter and custard. that is inspired. I’m going to try and veganize these. I never knew you could eat custard powder raw?!

      Haha, i never really thought of it as raw, but you can and it’s delicious šŸ˜€ x
